Both begin as the same loopback knit. French terry leaves the loops on the inside intact, so it stays breathable, keeps its shape and pills less; it usually sits around 220 to 300 gsm and works across three seasons. Brushed fleece takes that same terry and brushes the loops open into a soft nap that traps more air, so gram for gram it feels warmer and plusher, and it is normally built on a heavier base, roughly 280 to 400 gsm. The trade-off is that a raised nap flattens with wear.

Heat causes almost all of the shrinkage, and most of it happens in the dryer rather than the wash. Turn the hoodie inside out, wash cold or at 30°C on a gentle cycle, and skip fabric softener, which coats the loops and dulls the surface. Dry it flat wherever you can, since a heavy one will stretch at the shoulders on a hanger, or tumble on low and take it out slightly damp. Reshape the cuffs and hem by hand while it finishes drying.
