Linen fibre is stiff and relatively inelastic, so when the cloth folds it holds that fold rather than springing back the way wool or fine cotton does. The creasing is a property of the fibre, not a fault in the shirt or a sign of a loose weave. It eases as the garment is worn in, and most linen shirting is cut and finished on the assumption that it will be worn creased rather than pressed flat.
